The menu at Per Se is also more refined. While hotel restaurants often aim for variety, Per Se focuses on a tasting menu that evolves daily. This allows for greater creativity and precision.

Service is another area where Per Se excels. While hotel staff are highly trained, Per Se’s team operates with a level of coordination and anticipation that feels almost choreographed.

That said, hotel restaurants offer advantages. They are often more accessible, less formal, and sometimes more innovative. For travelers seeking convenience and variety, they remain an excellent choice.

Per Se, by contrast, preserves tradition. It does not seek to surprise—it seeks to perfect.

For some, this makes it timeless. For others, it makes it predictable.
